This is a double fermented coffee lovingly cultivated by independent farmers near San Mateo Yoloxochitlán, Mexico. Sourced in partnership with Terra Coffeas México and Galguera Gomez. Each cherry is carefully hand-picked, sorted, and delicately processed before macerating for 48 hours while submerged in water.
After fermentation, the parchment is washed and placed on patios or raised beds to slowly dry.
The result? A coffee born from generations of wisdom, years of dedication, intricate processing research, and lucky weather patterns. Big tasting notes of lime, butterscotch, and smooth milk chocolate icing. This coffee is a celebration of what can be achieved with patient respect for land and labor.
